With a cooking time of around 14-16 minutes, Riso Baldo is a variety of Long A rice, ideal for creamy risottos, rice dishes with sauce, timbales and cold salads.
Baldo rice is a hybrid of Arborio rice and Stirpe 136 rice; today, it is grown primarily in the Vercelli and Novara areas—it's traditionally used in the Vercelli recipe for Panissa! Already popular with chefs and professionals, Baldo rice has characteristics that make it highly prized.
The al dente consistency (and therefore firmness during cooking) and its absorbency are perfect for pairing with creamy sauces.
